Sensory Specialist

Milwaukee, WI

First Shift: Mon-Fri 8:00am - 5:00pm (1 hour lunch)

Job Summary:

  • Plans and conducts sensory panel evaluations on products, raw materials and in-process materials per quality system requirements. Interprets, evaluates, and reports the analyses in terms of accuracy and precision.
  • Manages the recruitment, training and validation of taste panelists.
  • Performs a variety of sensory methods including qualitative tests, difference tests and descriptive tests for monitoring and ensuring the quality of products.
  • Links sensory results with a basic understanding of brewing and packaging.
  • Partners with quality specialists and process leaders to enable and drive continuous and focused improvement to reduce variability in each process area as related to the flavor of in-process or package product.

Responsibilities:

Plans, Conducts, and Evaluates Sensory Analysis

  • Plans and conducts sensory analysis on products, raw materials and in process materials.
  • Evaluates and selects appropriate sensory procedures.
  • Selects and performs appropriate statistical analyses.
  • Maintains up-to-date and accurate sensory records.
  • Performs basic analytical and microbiological analyses as needed.

Leads Sensory Panel and Participation and Training

  • Recruits and trains new panelists and provides on-going training to existing panelists.
  • Develops and conducts appropriate training procedures.
  • Coordinates taster validation.
  • Evaluates panelist’s performance.

Qualifications:

Education:

  • BS in Food science or a biological science PLUS 1 year of customer service (server, bartender, etc.

Preferred Experience:

  • Level One: Beer Server from Cicerone Certification Program

  • BS or BA in a science related field of study (Chemistry, Biochemistry, Cereal Science, Microbiology, Food Science, Agronomy, Chemical Engineering preferred) or extensive sensory/brewing experience
  • Advanced degree or certificate in sensory, brewing or quality related processes (e.g. IBD, CQE, UC Davis Sensory & Consumer Science Certificate Program)
  • Two (2) or more years experience in quality related processes or science experience in a food processing or beverage facility with sensory analysis experience
  • Demonstrated use of advanced problem solving tools
  • Broad knowledge of the principles and techniques of sensory evaluation of beverages and foods as they apply to brewing or related fields
  • Advanced knowledge of statistical methods and computers
  • Ability to conduct panelist training and performance evaluation procedures
  • Ability to moderate focus groups/round table evaluations
  • Understanding of the brewing process preferred
  • Knowledge of beer flavor and off flavor development a plus
  • Thorough knowledge of quality systems
  • Advanced knowledge of continuous improvement concepts
  • Knowledge transfer and technical training skills across all levels of the organization
  • Demonstrated basic leadership skills; leads and owns testing programs
  • Ability and willingness to work a rotating shift operation, weekends and holidays as necessary to support production requirements
  • Must exhibit the flexibility needed to respond to frequent changes in production requirements
